Prussian immigrant Peter Schoenhofen established the operation in 1861 alongside partner Matheus Gottfried before buying out the company in 1867. The Peter Schoenhofen Brewing Company grew into one of Chicago's premier pre-Prohibition beer makers, famously anchored by its flagship Edelweiss brand. After weathering the dry years through cereal beverages and green river sodas, the firm reorganized upon Repeal as the Schoenhofen-Edelweiss Company. South Bend-based Drewrys Ltd. U.S.A. subsequently acquired the business in the 1950s, utilizing the Chicago facilities to package various house and regional labels until the facility was eventually shuttered in the 1960s.
